Ingredients ½ cup margarine, softened ½ cup unsalted butter, softened 1 cup white sugar 1 cup brown sugar 1 teaspoon vanilla extract 2 large eggs 1½ cups oatmeal (rolled oats) 2¾ cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1 cup chopped pecans 1 cup white chocolate chips Directions Preheat oven to 375°F. Line baking sheets with parchment paper. In a large bowl, cream together the margarine, butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs, one at a time, then mix in the vanilla. Stir in the oatmeal. In a separate bowl, whisk together the flour, baking powder, and baking soda. Gradually add the dry ingredients to the wet mixture and stir just until combined. Fold in the chopped pecans and white chocolate chips. Drop rounded spoonfuls of dough onto the prepared baking sheets, leaving a little space between each cookie. Bake for 10–12 minutes, or until the edges are lightly golden. For soft and chewy cookies: Bake for about 9–10 minutes. They may look slightly underdone in the center, but they'll firm up as they cool on the baking sheet for a few minutes.
