@itstime2eatt: Sichuan Boiled Fish (Shui Zu Yu 水煮鱼) Recipe Ingredients - White fish (tilapia, cod, grass carp) - Soft tofu - Chives (I didn’t have bean sprout of Napa cabbage) For the Soup - Garlic - White scallion - Dried chilis - Doubanjiang - Cooking wine - Red pepper oil - Sugar - Soy sauce - White pepper - MSG - Corn starch slurry Fish marinade - Salt - White pepper - Cooking wine - Corn starch - Egg white - Oil 1. Cook the dried chilis on low heat for a minute, remove from pan, and chop into small pieces 2. Stir fry the chives for a minute, then remove and place on the bottom of a clay pot 3. On a rolling boil, cook the fish for 20-30 seconds in a separate pot and rinse under cold water. Set aside. 4. In a clean wok, stir fry garlic, white scallions, and diced dried chilies together until fragrant. Then add in and cook down in order: 1. doubanjiang 2. cooking wine 3. soy sauce. I also season with pinch of salt, sugar, msg, and white pepper 5. Add boiling hot water then thicken the soup with corn starch 6. Add the soft tofu and white fish for about 2 minutes before transferring it all to the clay pot 7. Top with scallions, garlic, and Chinese red pepper oil 8. Sichuanese diaspora is very small. We eat this all the time in Sichuan, this dish is certainly not going to be lost or forgotten 😂

if people you are talking about are only in western apps, i don't think that's a good measure to conclude that a chinese dish will disappear after a few decades especially if it's still popular in china lol.

i'm assuming it may be because some dishes aren't deemed aesthetic enough for social media, are dishes that are common because they are heavily associated with homecooking so they aren't as common in restaurant, or just arent seen as relatable enough to the viewer (ex: pork belly is popular because lots of cultures already view it as delicious and it is pretty affordable, whereas dishes that involve century egg aren't that common outside of chinese cooking so foreign viewers may be less likely to try them.)

Fuzhounese food! Look up recipes for 紅糟雞,福州雞湯麵線, 锅边糊,etc. I lived in Sarawak for several years and there’s a substantial number of 2nd/3rd gen Fuzhounese there. So many of the traditional Fuzhou dishes can still be found there. In fact, 福州话 is fairly widely spoken there.

The reason why, IMO, is a majority of chinese who were immigrants were southern China/Hong Kong. A majority of USA in example, especially China Towns, are predominantly Cantonese/Taishanese and so is the culinary.
