seems to me that if you close the lid, condensation would accumulate on the underside of the lid and when you tilt it back, that water would run in to the hot oil and create a huge mess.

I get it but of course you're gonna get hot oil spatter if you're throwing it in there like that. Always use a pair of tongs and gently lower it into the pan never throw it in there like that. Common sense.

I love it but wear it to the wise if you're going to do this heat it slowly heat up your oil slowly never put this on a fire without any kind of liquid or water in it cuz it'll burn very easily so you want to put your oil in put your oil on the low heat let it heat all the way to temperature you have a thermometer so you can check that the mama and get to the desire at 350 or 400 that you want to deep fry in.. I've used this as a saute pan as well I even used it as a slow cooker because I turned it down low and I made a stew in it I love mine
