I used @Lifeway Kefir Farmer Cheese to make a delicious pumpkin cheesecake filling! Stir in the pumpkin purée, brown sugar, vanilla, pumpkin pie spice, and salt until smooth and evenly combined. Refrigerate while preparing the pastry. 3. Cut the pumpkins: Cut an even number of pumpkin shapes from the cold puff pastry. Leave half whole for the bottoms. 4. Create the faces: Use a small sharp knife to cut jack-o’-lantern eyes and mouths into the remaining pumpkin pieces. 5. Fill: Place the whole pumpkins on a parchment-lined baking sheet. Spoon 1–1½ tablespoons filling into the center, leaving about a ½-inch border around the edges. Don’t overfill them. 6. Seal: Whisk together the egg and water. Lightly brush the pastry border with egg wash, place the jack-o’-lantern piece on top, and gently press together. Crimp around the edges with a fork. 7. Chill for 15–20 minutes. This helps the puff pastry stay flaky and keeps the pumpkin shapes and faces more defined. 8. Bake: Brush the tops lightly with egg wash and sprinkle with coarse sugar, if using.
