Chicken Katsu Curry.  I’ve always wanted to try this recipe and it was worth it. Quick, easy and delicious. I would definitely make my curry from scratch next time tho 😅 Also honouring the life and legacy of the one and only Dolly Parton 🕊️ For the chicken 2 chicken breasts, salt & pepper  50g plain flour 2 eggs 1 tsp garlic powder  1 tsp onion powder  Salt & pepper  100g panko breadcrumbs Oil, for frying For the katsu curry sauce 1 tbsp oil 1 onion, finely sliced 2 carrots, diced 1 medium sized potato or about 5 baby potatoes ( i used more cuz it needed using) 3 garlic cloves, minced 1 tsp grated ginger 400ml chicken stock 2–3 katsu curry cubes, depending on the brand and how strong you like the sauce 1 tbsp soy sauce 1 tsp Worcestershire sauce 1 tsp honey Make the sauce: Heat the oil in a saucepan over medium heat. Add the onion, garlic  Stir in carrots and potatoes and cook for 5–6 minutes until softened. Add the garlic and cook for another minute. Add the chicken stock and bring to a gentle simmer. Add the katsu curry cubes and stir until completely dissolved. Stir in the soy sauce, Worcestershire sauce and honey. Simmer for 5–10 minutes until the sauce has thickened. Blend until smooth if you prefer a silky katsu sauce (or half and half if you’re like me) Serve: Slice the crispy chicken into strips and serve with rice.
