Industrial processed seed oils are not bad for you — that's what keeps appearing across social media. Paul Saladino tells Gary Brecka the research tells a different story. A controlled meal study compared an oleic acid-rich meal against a linoleic acid-rich meal — linoleic acid being the 18-carbon polyunsaturated fat that is the dominant fatty acid in seed oils like canola, soybean, sunflower, and corn oil. The outcomes were measured against two specific hormones: ghrelin, the hunger-stimulating anti-satiety hormone, and resistin, a protein whose rising levels in the body drive insulin resistance. The findings were precise and concerning: linoleic acid-rich meals produced significantly higher levels of both ghrelin and resistin compared to oleic acid-rich meals. More ghrelin means more hunger sooner after eating. More resistin means more insulin resistance developing over time. Both outcomes are exactly what you would predict in a dietary pattern that drives overeating and metabolic dysfunction — and both were produced specifically by the type of fat found in processed seed oils, not by the type of fat found in olive oil.
