I’ve been some bakers on YT , add eggs at the very end of a mixing the cookie dough- after all the butter sugar flour etc- What does this actually do to a cookie and should you incorporate this technique if you want a thick chewy but crispy edge cookie ?

So when calculating your baker’s percentage for the sugars - do you add the sugars together first to get an overall percentage relative to the flour? Then do a little more math to get the percentage of each - granulated and brown based on the total sugar?
