@uncovermore: Athens’ newest Bavarian bakery with 80-hour sourdough, pretzels, and Brotzeit in Kolonaki 🥨 Varia (@variabakery) opened this spring inside an Art Deco building with big glass windows. 🪑 Varia comes from brothers Cedric and Christopher von Halem, grandsons of Verner Panton — the Danish designer behind the Panton Chair, the first single-piece plastic chair ever mass-produced. Architect Stratis Doukas built the space as a bridge between Bavarian baking and that Danish design heritage, with real Panton pieces throughout: Pantop and VP Globe pendants, Pantonova seating, and a blue that runs through the room. The production is open, so you can watch the bread being made. 🥨 Start with the cardamom buns, then the brezel. Also on the menu is Pumpernickel, wholegrain Vollkornbrot, rye Roggenbrot, rustic Bauernbrot, chocolate brioche, and small Semmel rolls filled with cheeses and cured meats. ⏳ Every loaf ferments up to 80 hours, where most bakeries stop at 24 or 72, building a deeper crust, a subtle acidity, and bread that’s easier to digest.
