🍽️ Servings 4 servings 📝 Ingredients 🥩 Steak 1½ lbs sirloin steak or ribeye, cut into strips 1 tbsp olive oil 1 tsp garlic powder 1 tsp smoked paprika ½ tsp onion powder ½ tsp Italian seasoning 1 tsp salt ½ tsp black pepper ¼ tsp red pepper flakes 🍝 Fettuccine 12 oz fettuccine 1 tbsp salt, for pasta water ½ cup reserved pasta water 🧄 Garlic Butter Sauce 4 tbsp butter 5 cloves garlic, minced 1 tbsp olive oil 1 tsp Italian seasoning ½ tsp dried oregano ½ tsp smoked paprika ¼–½ tsp red pepper flakes 1 tbsp Worcestershire sauce 1 tbsp fresh lemon juice ½ cup freshly grated Parmesan cheese ¼ cup reserved pasta water, plus more as needed 2 tbsp fresh parsley, chopped Salt and black pepper to taste 🌿 Garnish ¼ cup freshly grated Parmesan cheese ¼ cup fresh parsley, chopped Freshly cracked black pepper Red pepper flakes, optional 👩🍳 Instructions 1. Bring a large pot of generously salted water to a boil. Cook the fettuccine until al dente according to the package directions. Reserve ½ cup of pasta water before draining. 2. Pat the steak dry and season with garlic powder, smoked paprika, onion powder, Italian seasoning, salt, black pepper, and red pepper flakes. 3. Heat the olive oil in a large skillet over medium-high heat. Add the steak in a single layer and sear for 2–3 minutes per side until deeply browned. Work in batches if necessary so the steak sears instead of steaming. 4. Transfer the steak to a plate and reduce the heat to medium. Add 2 tablespoons of the butter and the olive oil to the same skillet. 5. Add the minced garlic and cook for about 30 seconds until fragrant. Stir in the Italian seasoning, oregano, smoked paprika, red pepper flakes, and Worcestershire sauce. 6. Add ¼ cup of the reserved pasta water and scrape up all the flavorful browned bits from the bottom of the skillet. 7. Add the drained fettuccine directly to the skillet along with the remaining 2 tablespoons butter. Toss until the pasta is thoroughly coated in the glossy garlic butter sauce. 8. Add the Parmesan and toss continuously until it melts into the sauce. Add additional pasta water a tablespoon at a time if needed to keep the fettuccine silky rather than dry. 9. Stir in the lemon juice and chopped parsley. Return most of the steak to the skillet and gently toss it through the fettuccine, reserving several pieces for the top. 10. Cook everything together for another 1–2 minutes over low heat, just long enough to warm the steak without overcooking it. 11. Arrange the fettuccine on serving plates and place the remaining seared steak over the pasta. Spoon any garlic butter remaining in the skillet over the top. 12. Garnish with freshly grated Parmesan, chopped parsley, freshly cracked black pepper, and red pepper flakes if desired. 🔥 Cooking Tips * Get the skillet very hot before adding the steak and avoid overcrowding it. This creates the dark caramelized crust seen in the dish. * Reserve your pasta water before draining—the starch helps transform the butter and Parmesan into a glossy sauce that clings to the fettuccine. * Add the steak back near the end so it stays tender and juicy instead of continuing to cook while the garlic butter pasta finishes.
