INGREDIENTS - 700gr chicken thighs - 10 garlic cloves - 12 curly chili / cabe merah keriting - 5-10 bird eye chili - Shrimp paste - 1 egg - 30-50ml water - 1 tsp salt - 1 tsp chicken seasoning powder - 1/2 tsp white pepper - 3 tbsp cornstarch - 3 tbsp tapioca starch - 10-11 kaffir lime leaves - Oil (for frying) STEPS Blend the garlic, chilies, shrimp paste, egg and water until combined, then pour the mixture over the chicken. Add the seasonings, cornstarch, tapioca starch and kaffir lime leaves, and mix well until evenly coated. Marinate the chicken for at least 1-2 hours or for best results, overnight in the refrigerator. Once marinated, fry the chicken until fully cooked and golden brown.
