Chicken, mozzarella, basil and lentil bake 🤤 Any dish with basil, tomato and mozzarella is a winner in my eyes.   Prep time 10 minutes  Cook time 40 minutes  Serves 4 Ingredients: 6-8 tbsp olive oil, plus extra to drizzle  1 medium aubergine, sliced in 0.5cm rounds 3 garlic cloves, finely chopped 1 400g tin chopped tomatoes 1 400g tin lentils and their liquid 10 black kalamata olives, finely chopped 2 tbsp balsamic vinegar or glaze  25g bunch of basil, leaves picked  2 125g balls of mozzarella  2 chicken fillets Method: 1. Place a medium frying pan over a high heat with 3 tbsp olive oil. When hot, lay as many circles of aubergine into the pan as you can. Season with a generous pinch of salt and pepper. Fry for 3-4 minutes, until browned, then flip over and fry on the other side. When ready, transfer to a plate, add a splash more olive oil and repeat with the remaining aubergines.  2. Add the garlic to the pan and saute for about a minute, making sure it does not burn.  Add the tinned tomatoes, the lentils and the liquid from the tin and the chopped olives. Season generously and stir to combine. Simmer on a low heat for 8 minutes to infuse the flavours. Stir in the balsamic vinegar or glaze and remove from the heat.  3. Preheat the oven to 200’C/180’C fan/gas 6. Pour ⅓ of the lentil mixture into a medium oven proof roasting dish and spread out evenly. Arrange a layer of aubergines on top of the lentils, then basil leaves. Place the chicken breast flat on a chopping board. With your hand resting on top, slice each one horizontally through the middle to create four thinner fillets.  4. Lay two of the fillets into the dish and cover with a layer of torn up mozzarella. Repeat one more time, making sure to finish with a layer of the tomato lentil mixture before garnishing with the remaining mozzarella. Pour a generous drizzle of olive oil all over, season one more time and bake for 30-35 minutes, until the mixture is bubbling and the cheese is melted and golden. #dinnerrecipe #chickenbake #slowcooking #recipedeveloper #familymeal
