interesting procedure. I thought I was supposed to make the yellows creamy with mayo, soya etc and only after that mix it with the whites. Otherwise why would I separate the whites from the yellows after boiling the eggs?

Why do you separate the white and the yolk and then mix it back together? Seems pointless? Sorry if I’ve missed something there?
