Our caterer didn’t show the day of our wedding. The got in a terrible wreck on the way. We had the local pizza shop deliver pizza salad and cannolis every hour until we said stop. It was actually amazing.

I used to cater weddings with an ice cream food truck: if you are having an outdoor wedding out in the country make sure there is a hard and flat surface for trucks to park. Dry flat grass, gravel, dirt are all good but we can’t do mud/wet grass at our weight

Make sure the layout and parking for said truck can be accommodated. As well any permits. Usually the food truck people know. But it’s not always the case.

Also, most food trucks have their own generator for their power needs. This is great for a noisy festival or street fair. But if you are in a backyard or some other quiet atmosphere, the generator is probably going to be way louder than you think! Talk to them about how far away their generator can go or look at rental options for a quieter or further away generator

We had a buffet dinner and then after dessert, about an hour into dancing we opened up a taco truck. We had a great indoor/outdoor space so it flowed great. Went with this instead of favors ☺️

These are great tips! Got horrific food poisoning from a wedding food truck experience because they were rushing to make enough food for the guests and cut some corners. Multiple trucks for groups larger than 50-75 is something to consider for sure!

Don't forget to talk about your timeline also! Will they be cooking to order? Cook everything before they arrive onsite? Arrive early to cook ahead of time while already onsite? They may need early access to your venue or need to be running generators during your ceremony time (which could be noisy). Or if they are cooking off-site they may need to be arriving shortly before dinner service and therefore in the middle of other festivities and after other vendors are already set up

I run a bbq truck and have done a few weddings. I met with the couple prior to their wedding had them try my food a sample plate of everything we offer. they picked two proteins and two sides and guests were able to choose between three homemade bbq sauces. they provided drinks. every guest got both proteins or a choice of protein. I always cook for more than what the couple asks for, but do not charge them. this is for unexpected guests or accidents like a dropped plate. we served 150 in about 1 hour and 15 minutes. it makes it simple with a pre set menu and goes quicker with just me and my wife serving direct from the truck. at the end of the night we package left overs to include plates and silverware and give them to the couple. we have done this at backyard weddings and event spaces. for power we have our own generators which are very low decibel units and have never had a noise issue at any of the events. I find more and more folks are using food trucks because all they have to provide is trash cans for the guests to throw away their plates when done. we have had several complaints from the guests and comments on how convenient it is. Just my two cents worth. I am in Colorado in case you were wondering.

I went to a reception that had a taco truck. Everything was served on regular plates (no disposables) There were sides you could choose from also, so not only tacos. Silverware was already on the table. This reception was about 100 people at a historic mansion. It was fantastic. It was only one truck, so they did stagger how many people would be line. The venue had its own event coordinator which is why everything went so smoothly.
