a simple wholefoods dinner for tea ☺️ Garlic butter steak, parmesan sweet potato fries + kale caesar 🥬 Recipe (serves 1): *click link in bio for full recipe details including ingredients list x -Cut the sweet potato into fries and soak in ice-cold water for 20–30 mins (optional). Drain and dry extremely well, then toss with the cornstarch, followed by avocado oil, smoked paprika, garlic powder and pepper. -Air-fry at 190°C for 20 mins, shaking a couple of times. Once browned, season with salt and toss immediately with parmesan and plenty of fresh chives. -Remove the tough stems and chop the kale. Add 1-2 tsp lemon juice + a pinch of salt and massage firmly with your hands for 45-60 seconds, until darker, softer and reduced in volume. -Mash the optional anchovy and mix with 1 tbsp Greek yogurt, 1 tsp mayo, 1 tsp Parmesan, 1/2 tsp Dijon, 1/2 tsp worcestershire, grated garlic, ½ tsp lemon juice and black pepper. Add a splash of cold water to loosen, then toss thoroughly through the kale. -Pat the sirloin dry, season generously with salt and pepper and sear in a very hot pan lightly coated with cooking spray for around 2-3 mins per side, depending on thickness and preferred doneness. -Lower the heat and add the butter + crushed garlic. Tilt the pan and spoon the foaming garlic butter continuously over the steak for 30-60 seconds. Remove from the heat, stir the fresh parsley into the butter and spoon it over the steak. -Rest the steak for 5-10 mins. Top the Caesar with parmesan. Slice the steak against the grain and pour all the garlic-parsley butter and resting juices over it.
