I’m lucky enough to still know people in the mountains of Western North Carolina who will either gather the fresh berries for me or let me come up to the property at harvest because the last two years here in Atlanta Georgia has sucked for elderberries. Just like last year when the plant was in the full bloom, we had very hard heavy rain that knocked off almost all of the flowers and then we had a very dry beginning of summer and then right when the berries that were left. We’re getting right another really hard downpour and thunderstorms that knocked the rest of the berries off and this has happened two years in a row now. So while I have eight or nine, really Hardy Strong elderberry bushes, the weather has not let them complete their very cycle. Also, something of interest to me as somebody who grew up around hundreds of not thousands of wild growing American elderberries we ate them by the handful and many people still do right off the tree. But we were taught to only eat the really dark black ones and not to the seeds because the very flesh much like the flowers, do not contain the glycosides, BUT the seeds do. And much like poke berries the seeds will pass right through you without being broken down and releasing that component. The only negative effect any of us ever had from eating them raw as long as we followed. The rules was usually an upset stomach and sometimes diarrhea, and that came from over eating them. Another fun fact that I learned in our phytochemistry class when you dry the elderberries very well the glycosides in them starts to break down to such small amounts that you physically could not and just enough to cause any issues and if you did eat the amount needed to even start to have an issue from the glycosides, you would have much more issues from the pure bulk of the amount. Also learned never to tincture, fresh elderberries because the glycosides are very solvent and alcohol and will pull over much more of that chemical into the tincture than you really want.
