Pumpkin Spice Oatmeal Cream Pie Cookie: Ingredients Cookie: 1 1/4 cup unsalted butter, softened 2 cups brown sugar 2 eggs, room temp 2 tablespoons molasses 1 tablespoon vanilla extract 1/2 cup pumpkin puree 3 cups all purpose flour 1 cup quick oats 2 teaspoons baking soda 1 teaspoon salt 2 teaspoons pumpkin pie spice 1/2 teaspoon cinnamon Filling: 1 cup unsalted butter, softened 2 cups powdered sugar 1 teaspoon vanilla extract 3/4 teaspoon cinnamon 1/4 teaspoon pumpkin pie spice 2 cups marshmallow fluff Instructions Cookie: In a large bowl mix together butter and brown sugar. Add in eggs, molasses, and vanilla extract and mix until well combined. Mix in pumpkin puree. In a seprate bowl mix together flour, quicik oats, baking soda, salt, pumpkin pie spice, and cinnamon. With the mixer running, slowly add dry ingedients in little amounts to the wet. Chill dough for 1 hour. This is important, pumpkin puree made the cookies moist and needs more time to firm up. Bake cookies at 350 degrees for 11-12 minutes. Filling: Use hand mixer to cream together butter, powdered sugar, vanilla extract, cinnamon, and pumpking pie spice. Use a spatula to fold in marshmallow fluff. Once cookies are compleately cooled, pipe filling on one of the cookies and place the other cookie on top like a sandwich. #baking #fall #pumpkinspiceseason #homemade #cookies
