Puff Pastry Pumpkins #MadeWithLifeway 🎃 #lifewaypartner Autumn is coming and these little festive treats are perfect for a Spooky movie night! I used @Lifeway Kefir Farmer Cheese to make a delicious pumpkin cheesecake filling! Ingredients Filling * ½ cup (110–115 g) Lifeway Farmer Cheese * ½ cup (120 g) pumpkin purée * ¼ cup (50 g) light brown sugar, packed * 1 tsp vanilla extract * 1 tsp pumpkin pie spice * Pinch of salt Pastries * 1 package (2 sheets) puff pastry, thawed but still cold * 1 large egg * Orange food coloring, optional Instructions 1. Blend the farmer cheese in a small food processor or blender until smooth 2. Transfer the cheese to a bowl. Stir in the pumpkin purée, brown sugar, vanilla, pumpkin pie spice, and salt until smooth and evenly combined. Refrigerate while preparing the pastry. 3. Cut the pumpkins: Cut an even number of pumpkin shapes from the cold puff pastry. Leave half whole for the bottoms. 4. Create the faces: Use a small sharp knife to cut jack-o’-lantern eyes and mouths into the remaining pumpkin pieces. 5. Fill: Place the whole pumpkins on a parchment-lined baking sheet. Spoon 1–1½ tablespoons filling into the center, leaving about a ½-inch border around the edges. Don’t overfill them. 6. Seal: Whisk together the egg and water. Lightly brush the pastry border with egg wash, place the jack-o’-lantern piece on top, and gently press together. Crimp around the edges with a fork. 7. Chill for 15–20 minutes.
