Please don’t “oil the noodles” to try and stop them from sticking together. It doesn’t work in the first place: oil and water don’t mix. It will just float on the top and ultimately it’s in your strainer when it will actually touch the noodles for the first time; and now you have made it harder for any sauce to stick to the noodle. If your noodles are sticking it’s for one of a couple reasons. Usually it’s because you have way too many noodles for the amount of water / size of pot being used. As the starch releases into the water; the stickier it will be the higher it is concentrated. More water dilutes it. Also most people don’t salt the water anywhere near enough. You want it “salty like the ocean”. It’s not just for seasoning: it’s to control the speed at which starch releases.
