Light & Fresh Lunch Today 🥗 After a hearty breakfast, lunch needed to be a little lighter today! A half Chicken Caesar Wrap paired with a fresh Strawberry Pecan Salad was exactly what I wanted. Grilled chicken, crisp romaine, Parmesan, and Caesar dressing tucked into a soft wrap, with mixed greens, juicy strawberries, cucumber, feta, pecans, and a light balsamic vinaigrette on the side. Sometimes you don't need a huge lunch,just a little bit of everything to keep you satisfied without feeling weighed down. 🥗 Half Chicken Caesar Wrap + Strawberry Pecan Salad Perfect for a light and fresh lunch without leaving you hungry! Chicken Caesar Wrap — Makes 2 halves 1 medium flour or spinach tortilla ½ cup cooked grilled chicken, sliced ¾ cup chopped romaine lettuce 2 tbsp shaved or grated Parmesan 1–2 tbsp Caesar dressing Cracked black pepper Squeeze of fresh lemon, optional Strawberry Pecan Salad 1½ cups mixed greens ⅓ cup sliced fresh strawberries ¼ cup sliced cucumber A few thin slices red onion 2 tbsp crumbled feta 2 tbsp chopped pecans 1–2 tbsp balsamic vinaigrette Directions: Toss the romaine and chicken with just enough Caesar dressing to lightly coat everything. Add Parmesan and cracked pepper. Place the mixture down the center of the tortilla, roll tightly, and cut diagonally. Serve one half for lunch and save the other for later.
