SOURDOUGH BREAD — PART TWO 🍞 Now for the part that makes the crust SO good. Once your loaf has finished its cold ferment, here’s how I bake it: Preheat your oven to 450°F with your Dutch oven inside for at least 45–60 minutes. While the oven is preheating, put your cold dough in the freezer for about 20–30 minutes. This makes the dough firmer and MUCH easier to score. Once the oven is ready: • Turn your dough onto parchment • Score your little decorative designs first • I add a little uncooked rice underneath the parchment to help prevent the bottom from burning • Place the loaf into your screaming-hot Dutch oven • Add 1 ice cube beside the parchment for extra steam • Put the lid on Bake for 6½ minutes. Then take the Dutch oven out, remove the lid, and make your deep score down the center of the loaf. Put the lid back on and bake for another 40 minutes. Then remove the lid and bake another 10–15 minutes, or until the crust is a deep golden brown. Let it cool for at least 2 hours before slicing — I KNOW it’s hard to wait, but it makes such a difference!
