🍅🐐✨ Tomato Concassé (2 servings) Ingredients Tartare • 1 heirloom tomato • 2 tbsp chopped pickles • 1 shallot • 4 anchovies • Extra virgin olive oil • Salt to taste Goat Cheese “Mousse” • 120gr soft goat cheese • 100gr mascarpone • 2 tbsp whole milk • 1 tsp honey • Zest of 1 lemon To Garnish • 2 tomatoes • Crunchy garlic sticks • Dill • Basil • Basil oil • Tomato water (check out my tomato oil video on how to make this) Recipe 1️⃣ For the goat cheese mousse, add the goat cheese, mascarpone, milk and honey to a bowl and whisk until smooth. Add the lemon zest and let it set in the fridge for 1 hour. 2️⃣ To make the tomato concassé, cut a small cross in the bottom of the 2 tomatoes. Blanch them for 30 seconds and immediately cool them down in ice water. 3️⃣ Peel off the skin and remove the inside of the tomatoes. 4️⃣ For the filling, finely dice all the ingredients for the tomato tartare and mix them in a bowl with the chopped anchovies, olive oil and some salt. 5️⃣ Fill the tomato concassé with the tomato tartare. 6️⃣ Add the goat cheese mousse into a ring mould and place the filled tomato concassé on top. Finish with a little olive oil, salt and pepper. 7️⃣ Crumble some crunchy garlic sticks around the tomato and add some basil and dill. 8️⃣ Pour the tomato water and basil oil around the plate et voilà! Enjoy!!! 🍅🫶🏼 What a combo this was. Fresh flavours all around. The tomato tartare inside was nice and pickly, while the goat cheese was light, fresh and a little bit sweet.
