Preheat your oven to 350 degrees Fahrenheit. Thoroughly grease and line an 8” round pan with a parchment round, In a large bowl, sift the flour, sugar, cocoa, baking soda, baking powder, and salt. Whisk to combine and set aside. In a medium bowl, whisk together the yogurt, egg, and oil. Whisk the milk with vinegar or lemon and then add (the DIY buttermilk) it to the wet ingredients. Whisk in vanilla and coffee. Add the wet mixture to the dry mixture and whisk until smooth. Lay the orange slices in a neat layer across the bottom of the pan. In a small sauce pan add the sugar and water. Turn the stove on medium heat, swirling the pan constantly until a medium amber color is reached. Pour the caramel over top of the orange slices. Pour the chocolate batter over the caramel covered oranges. Bake the upside down cake in the preheated oven for 30-35 minutes or until a toothpick comes out with a few moist crumbs and the top springs back to the touch. When the cake comes out of the oven, carefully run through the sides of the pan with an offset spatula or sharp knife to release the edges.
