🐑 Herb Butter Rack of Lamb
A beautifully roasted rack of lamb with a golden herb-butter crust. Tender in the center, crispy on top, and perfect for an elegant dinner or impressive TikTok food content.
Ingredients
🐑 Frenched Rack of Lamb — 900g
🧈 Unsalted Butter — 70g, softened
🌿 Fresh Rosemary — 6g, finely chopped
🌿 Fresh Thyme — 4g, finely chopped
🧄 Fresh Garlic — 15g, minced
🍞 Panko Breadcrumbs — 50g
🧂 Sea Salt — 6g
🌶 Black Pepper — 3g
🫒 Olive Oil — 10g
🌶 Dijon Mustard — 20g
Instructions
Pat the lamb dry and season all over with sea salt and black pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the lamb rack, meat-side down, until deeply browned, about 2–3 minutes. Sear the other sides briefly as well.
In a small bowl, mix the softened butter with rosemary, thyme, and garlic until well combined.
Brush a thin layer of Dijon mustard over the browned meat side of the lamb.
Spread the herb butter evenly over the mustard, then gently press the panko breadcrumbs onto the buttered surface to create an even crust.
Roast in a 400°F (200°C) oven until the lamb reaches your desired doneness, about 15–20 minutes depending on thickness.
Remove from the oven and let the lamb rest for 10 minutes before slicing between the bones.

Tips
Let the lamb come closer to room temperature before cooking for more even roasting.
Get a good brown crust on the lamb before adding the butter mixture—this gives you much better flavor.
Press the breadcrumbs firmly into the herb butter so the crust stays in place while roasting.
Use a meat thermometer for the most reliable results. For medium-rare, remove the lamb around 130–135°F (54–57°C) and let it rest before slicing.
Most importantly, don't skip the resting time. Ten minutes lets the juices settle back into the meat and keeps the lamb tender.
