Samosas 🇮🇳 Ingredients 1.3 lb (600 g) yukon gold potatoes ½ cup peas (fresh or frozen - if frozen thaw before) 2 Tbsp ghee or oil 1 tsp cumin seeds Pinch of hing (asafoetida), optional 2 tsp finely grated ginger 1–2 green chilies 2 tsp ground coriander 1 tsp ground cumin ½ tsp turmeric ½–1 tsp Kashmiri chili powder ¾–1 tsp garam masala 1–1½ tsp amchur (dry mango powder) or 1–2 tsp lemon juice 1 tsp crushed fenugreek 1.5 tsp salt (to taste) 4 Tbsp chopped cilantro For the Dough 3 cups (360 g) all-purpose flour (or maida flour) 6 Tbsp (75 g) ghee or neutral oil 1 tsp ajwain (carom) seeds 1 tsp salt ~¾ cup room-temperature water To seal 2 teaspoons flour mixed with 2 teaspoons water, or just water 
 For frying Neutral oil for deep frying #samosas
