The restaurant features a two story interior in the restored 1912 Capitol Park loft building. The restaurants butchers start with sourcing prime beef, lamb, certified Japanese Wagyu & other rare cuts from around the globe, including from small farms in the US to bring special cuts that are not found anywhere else. Those weekly orders are placed into their aging room where the meat becomes a beautiful, bright cherry red steak that’s ready for the grille.
