Imagine a deafening abundance of birdsong so loud it wakes your children at dawn; the chirrup of house sparrows, the chattering of starlings, the melody of the wren, and the clear high-pitched flute of blackbirds saturating the garden, reverberating around your local park, dominating your neighbourhood from early morning to evening twilight. That was the reality 50 years ago, but since then Britain has lost an astonishing 73 million wild birds from its landscape, according to the British Trust for Ornithology (BTO). Human intervention in the form of housing and commercial building developments have dramatically reduced habitats for wild birds in Britain, a country that has become one of the most nature depleted in the world. The industrialisation of agriculture, the repeated growing of monocultures such as cereal crops, pesticides, pollution and climate change are all decimating our wild bird population, and in some cases driving long-loved and well-known species towards extinction. As the symphony of birdsong known as the dawn chorus draws to its annual close at the end of June, the Guardian has recreated an audio landscape from across the past 50 years to try to portray the variety and plentitude of birdsong we have lost since tens of millions more birds were in full voice. The calls and songs of a variety of species have been isolated to build an illustration of the dawn chorus, representing a year in each decade, from now back to the abundance of 1976. Shakshuka 🍳🌶️ — maybe this is how eggs should be made every time because damn, they good 😮‍💨 Ingredients 5 eggs 1 large onion 4–5 garlic cloves 2 red bell peppers 3–4 tomatoes Handful of fresh coriander, chopped Mozzarella Seasonings 2 tsp coriander powder 2 tsp paprika 1 tsp chilli powder Salt to taste Method 1️⃣ Char the veg Lightly oil the peppers and tomatoes, then char them until the skins are blackened. Place them into a water bath, peel off the charred skins, then roughly chop and set aside. 2️⃣ Build the base Add the chopped onion to a heated pan with a little oil and sauté for 3–4 minutes, or until translucent. Add the minced garlic and sauté for another 1–2 minutes. 3️⃣ Add the peppers & tomatoes Add the chopped peppers and tomatoes to the pan and cook until everything has softened and broken down into a rich sauce. 4️⃣ Season & cheese it up 🧀 Add the coriander powder, paprika, chilli powder and salt. Mix well, then add some mozzarella and let it melt into the sauce. 5️⃣ Add the eggs 🍳 Make small wells in the sauce and crack in your eggs. Cover with a lid and cook until the whites are set but the yolks are still runny — around 1–3 minutes depending on your pan. Or maybe cook them thoroughly with all this salmonella stuff going on 😭 6️⃣ Finish it off 🌿 Garnish generously with chopped coriander and serve straight from the pan with some bread for dipping. #fyp #EasyRecipes #egg #shakshuka
