Follow these steps to get a clear, transparent broth full of "homecooked flavor." 🥩Nutritious Broth Ingredients 1.5 kg fresh beef (at the butcher, get a bone-in beef shank for rich texture; and a bone- rib for flavor). 1 large white onion, whole. 1 large head of garlic, washed and halved lengthwise (with skin on). 3 ears of corn, husked,, and cut into thick segments. 4 large carrots, peeled and cut into medium chunks. 4 white potatoes, washed and quartered. 3 young zucchinis, cut into rounds. 1/4 head of cabbage, cut into large chunks. 1 large handful of fresh cilantro, washed. Coarse salt, to taste. 🧑‍🍳Detailed InstructionsStep 1: Clean the meat: In your largest pot, add all the beef, the whole onion, the halved head of garlic, and a large handful of coarse salt. Cover plenty of water (about 4 to 5 liters). Step 2: The secret to clarity: Bring to a boil over high heat. Pay close attention: as it starts boil, a layer of dark, gray foam will rise to the surface. Repeatedly skim off and discard this foam with a spoon. This is the key secret to keeping the broth clear and free off-flavors. Step 3: Slow simmer: Once the broth stops foaming, turn the heat down to medium-low. Cover the pot and simmer patiently for 15 to 2 hours. When you poke the meat with a fork, it should feel very tender and start to fall off the bone. Step 4: The order of vegetables Do not add all the vegetables at once. First, add the corn (the hardest kind), cover the pot, and cook for 15 minutes.
