Cook the Sauce: Sauté the onion, garlic, bacon scraps, and bay leaf in olive oil until golden. Stir in tomato paste and crushed tomatoes for 3 mins. Pour in the beer, Port wine, and beef stock. Simmer for 15 mins. Remove the bay leaf/bacon, blend the sauce until smooth, stir in the cornstarch slurry, and simmer until thick. Season with salt and piri-piri. Keep hot!2. Prep the Meat: Season the steaks with salt and garlic powder. Sear them in a hot skillet, then grill the split sausages in the same pan until browned. Lightly toast your bread.3. Assemble: Place one slice of toast in a deep, oven-safe dish. Layer the ham, steak, linguiça, and fresh sausages. Top with the second slice of toast.
