Green Chile and Poblano Chicken Stew This hearty Mexican-inspired chicken stew brings together smoky poblanos, roasted Hatch green chiles, tender chicken, and creamy potatoes in a richly seasoned broth. It’s cozy, comforting, and packed with layers of chile flavor. Every spoonful has a little smoky heat, savory chicken, and tender vegetables. Serve it piping hot with warm tortillas or cornbread for the ultimate family-style meal. Ingredients 1½–2 pounds boneless chicken breasts, cut into large pieces 1–2 tablespoons oil 4 cloves garlic, roasted and chopped, or raw and chopped 1 cup diced celery 1 cup diced carrots 1 onion, diced 1½ tablespoons dried Mexican oregano 1 teaspoon New Mexico red chile powder 2 teaspoons ground cumin Salt and black pepper, to taste 2 poblano peppers, halved and seeded 12–14 ounces roasted, peeled Hatch green chiles, coarsely chopped 6–8 cups chicken broth 2 medium russet potatoes, peeled and cubed Fresh cilantro, chopped, for garnish Chopped onion or sliced jalapeños, for garnish Instructions Roast the poblanos. Place the poblano halves skin-side up under the broiler. Broil until the skins are blistered and blackened. Steam and peel. Transfer the hot poblanos to a bowl and cover for about 10 minutes. Peel away the skins, remove any remaining seeds, and roughly chop the peppers. Sauté the vegetables. Heat the oil in a Dutch oven over medium heat. Add the celery, carrots, and onion. Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften. Build the seasoning. Add the Mexican oregano and cook for about 2 minutes. Stir in the garlic and cook until fragrant, about 30–60 seconds. Add the chiles. Stir in the roasted poblanos and Hatch green chiles. Cook for 3–4 minutes so the flavors can come together. Season the chicken. Add the New Mexico chile powder and cumin. Season with salt and black pepper. Add the chicken pieces and stir well to coat them with the vegetables and spices. Add the broth. Pour in enough chicken broth to fully cover the chicken. Bring the stew to a boil, then cover and reduce the heat to a gentle simmer. Simmer. Cook for about 45 minutes, stirring occasionally, until the chicken is completely cooked and tender. Cook the potatoes separately. While the stew simmers, place the cubed potatoes in a separate saucepan and cover with water. Bring to a boil and cook until fork-tender. Drain and set aside. Shred the chicken. Remove the cooked chicken from the stew and let it cool slightly. Shred it with two forks or a hand mixer. Finish the stew. Return the shredded chicken to the Dutch oven. Add the cooked potatoes and gently simmer for a few minutes, just until everything is heated through. Taste and adjust. Add more salt, black pepper, cumin, or chile powder if needed. If you prefer a thinner stew, stir in a little more broth. Serve. Ladle into bowls and garnish with fresh cilantro, chopped onion, and sliced jalapeños. Serve with warm flour tortillas or cornbread.
