@emma_recipes: Ingredients: (Servings 4) Garlic Butter Steak: 1½ lbs sirloin steak, cut into bite-size cubes 1 tbsp olive oil 1 tsp garlic powder 1 tsp smoked paprika ½ tsp onion powder ½ tsp black pepper ¾ tsp salt 3 tbsp butter 4 garlic cloves, minced 1 tbsp chopped parsley Creamy Parmesan Tortellini: 20 oz refrigerated cheese tortellini 2 tbsp butter 4 garlic cloves, minced 1½ cups heavy cream 1 cup freshly grated Parmesan ½ cup shredded mozzarella ½ tsp Italian seasoning ¼ tsp red pepper flakes Salt and black pepper to taste 1/4–1/2 cup reserved pasta water For the Finish: Fresh Parmesan Chopped parsley Cracked black pepper Red pepper flakes Make It: Cook the tortellini according to the package directions. Reserve about ½ cup pasta water before draining. Pat the steak completely dry and season with garlic powder, paprika, onion powder, salt, and pepper. Heat olive oil in a cast iron or skillet over high heat. Add the steak in a single layer and sear for about 2 minutes without moving it. Flip and cook another 1–2 minutes. Reduce the heat. Add butter and minced garlic and toss the steak in the bubbling garlic butter. Remove the steak so it stays juicy. In the same skillet, melt another 2 tablespoons butter and sauté the garlic for about 30 seconds. Add heavy cream and Italian seasoning. Simmer gently for 2–3 minutes. Lower the heat and gradually stir in Parmesan and mozzarella until you have a thick, glossy cheese sauce. Add the tortellini and enough pasta water to loosen the sauce. Toss until every tortellini is heavily coated. Spoon onto a plate or shallow bowl and pile the garlic butter steak bites over the top. Spoon some of the remaining garlic butter over the steak. Finish with Parmesan, parsley, cracked pepper, and just a few red pepper flakes.
