🇵🇭 La Paz Batchoy | Soups So Good It Can Cure Any Sickness Ep. 31 My take on one of the Philippines most beloved noodle soups. Originating from the La Paz district of Iloilo CIty it grew from a humble market meal into one of Iloilo’s most recognizable dishes! It’s rich, garlicky and delicious and probably one of my favorite noodle soups of all time *most ingredients are estimates since I cook and season mostly by feel so taste and season as you cook to fit your taste! :) INGREDIENTS: Kaldo / Broth: - 2 kg pork bones - 2 kg beef marrow bones - 1kg pork shoulder, kasim, or pork belly - 2 onions, roughly chopped - 4 heads garlic, halved - 2 green onion, roughly chopped - 1 tbsp peppercorns - water as needed - 1/4 cup ginamos or to taste - Salt/patis, to taste - 2-3 tsp sugar, optional Meat Toppings: - pork liver, sliced - Cooked pork shoulder, sliced Noodles & Toppings: - miki/egg noodles - crushed chicharon - toasted garlic - spring onions - Egg yolk - Roasted Bone marrow INSTRUCTIONS: - add your pork bones and beef marrow bones to a large pot and blanch for 10 minutes. Discard water and rinse the bones before adding them back into the pot with the onions, garlic, leek, and peppercorns. Fill w/ water and simmer for 8 hours, or overnight for the best results. - Once the stock is ready, remove bones, add guinamos to a strainer lined optionally with cheese cloth and strain soup for a silkier texture. add soup back to pot - add your pork shoulder and simmer for around 45 minutes - In a separate pot, sauté some garlic until lightly toasted before adding your broth. Season with more guinamos if needed, sugar, and fish sauce to taste. Optionally you can blend this broth along with bone marrow if you want an extra rich soup. - Add the pork liver to the reserved broth and gently simmer until fully cooked through. Avoid overcooking it so the liver stays tender. Remove and slice let it rest before slicing thinly along with pork shoulder. - Slice cooked pork and liver. - Serve with noodles, hot broth, sliced pork/ and liver, crispy garlic, spring onions scallions, crushed chicharon, an egg yolk, and ea piece of bone marrow. Enjoy! #Soups #Soup #asmr #asmrcooking
