The most nutrient dense oatmeal cups & pancakes that I come back to every week! 🫶🏼  HIGH PROTEIN OATMEAL CUPS  INGREDIENTS: • 1/2 cup old-fashioned rolled oats • 1 tbsp hemp hearts • 1 tbsp ground flaxseed • 1–2 tbsp pumpkin seeds • 1/2–1 scoop protein powder (vanilla or unflavored) • 1 scoop collagen powder • 1/2 tsp cinnamon • Pinch of salt (optional) • 1–2 tsp brown sugar, or to taste (optional) TO PREP: Add all of the dry ingredients to an individual cup or container with a lid. Stir to combine, cover, and store until ready to use. WHEN READY TO EAT: 1. Add 1 cup milk (dairy or non-dairy) to the cup and stir well. 2. Microwave on high for 2–2½ minutes. 3. Stir and let sit for 1–2 minutes to thicken. 4. If it’s too thick, add another splash of milk and stir. In a large bowl, whisk together the flour, baking powder, sugar, and salt. 2. In a separate bowl, whisk together the milk, melted butter, and eggs until well combined. 3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. The batter may be slightly lumpy — don’t overmix. 4. Heat a lightly greased griddle or large skillet over medium heat. 5. Pour about 1/4 cup batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. 6. Flip and cook for another 1–2 minutes, until golden brown and cooked through. 7.
