when you brown butter, you can actually add 1-2 tsp of milk powder when it starts to bubble to make a more intense brown butter.

My mum does apple crumble but instead of like the crunchy oat toppings everyone else seems to do, she makes the top with milk powder, plain flour, brown sugar and butter. She mixes it together until it's like breadcrumbs and then bakes it in the oven. Delicious!!

chef here - browning the butter also removes some of the moisture in it, so the dough had less moisture. that's probably why it didn't look the same as the other cookies.
