This pregnancy has been humbling me every chance it gets and my sweet husband had to step in and finish these muffins for you guys when my back finally gave out. I’d say he earned his official sous chef title 😭🫶🏼 Full recipe down below, you can also find the recipe in the link in my bio! Pumpkin cream cheese muffins Ingredients: ⁃ 1 cup brown sugar ⁃ 1/2 cup unsalted butter, melted ⁃ 1 cup pumpkin puree ⁃ 2 eggs ⁃ 1 tbsp vanilla bean paste ⁃ 1 1/2 cup all purpose flour ⁃ 1 tsp baking powder ⁃ 1 tsp baking soda ⁃ 1/2 tsp salt ⁃ 1 tsp cinnamon ⁃ 1 tbsp pumpkin spice Cream cheese filling: ⁃ 4 oz cream cheese, room temp ⁃ 2 tbsp granulated sugar ⁃ 1 tsp vanilla bean paste ⁃ 1 tbsp all purpose flour ⁃ 1 tbsp heavy cream Streusel: ⁃ 1/2 cup all purpose flour ⁃ 1/4 cup dark brown sugar ⁃ 3 tbsp unsalted butter, melted ⁃ 1/2 tsp cinnamon ⁃ 3 tbsp unsalted pepitas Instructions: Preheat the oven to 350°F. Line a 12-cup muffin pan with paper liners. In a small bowl, beat the cream cheese until smooth. Add the sugar, vanilla bean paste, flour, and heavy cream, then whisk until smooth and creamy. Transfer to a piping bag and set aside. In a medium bowl, combine all of the streusel ingredients and mix until coarse crumbs form. Set aside. In a large bowl, whisk together the brown sugar, melted butter, pumpkin purée, eggs, and vanilla until combined. Add the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice. Mix just until no dry streaks remain. Fill each muffin liner about halfway with batter. Pipe the cream cheese filling into the center of each muffin, inserting the tip of the piping bag about ½ inch into the batter so the filling stays mostly near the top. Sprinkle the streusel evenly around the edges of each muffin, leaving the cream cheese center exposed. Bake for 25–30 minutes, or until a toothpick inserted into the muffin (avoiding the cream cheese center) comes out clean.
