I would choose Grand Floridian and then go to Epcot for early morning entry and then end it at magic kingdom for the fire works etc

Personally, I like this idea as then everyone is happy. If they are planning to stay at the pool, personally I prefer Beach Club pool over the Grand. But I also dislike the Grand very much so take that as you will. If you are going to park hop to all 4 parks, personally, I’d start at Animal Kingdom as it opens the earliest. Book as early LL to start at Hollywood Studios, going there second, the hop over to EPCOT, if riding Guardians use the single LL for that. Then end at Magic for the fire works and rides. And by doing multi-pass based on availability, you could use them in the remaining parks after Studios. Coming from an annual passholder/travel agent.

Grand Floridian and park hop MK and Epcot! You can use lightning lane for both and Allie does have videos on the lightning lane park hopping

You could still do Boardwalk and park hop. You can walk or take a Friendship boat to both Epcot and Hollywood Studios. You could take the bus to MK and then monorail to Epcot, or start in Epcot and then monorail to MK and monorail back to Epcot and walk through to the boat or take a bus back.

If you’re gonna leave the little girls behind, then I would absolutely pick beach club. It has the best pool on all of property and is the most fun for kids. And then for the niece that’s into big rides I would park hop Hollywood Studios and Epcot. Starting with Hollywood Studios because those are the harder lightning lanes to get, so you can have your initial three reserved for that park and then jump over to Epcot afterward. That also gets you out of HS before the afternoon when it starts to feel like a hot concrete jungle.
