I tell you, if my local grocer put pink cauli in a bin and said it was even 50 cents cheaper than pure white, I'd buy it. It's harmless. We have to stop needing or being Told we need perfectly formed veg. "The primary reason for pink cauliflower lies in the presence of anthocyanins. Prolonged exposure to sunlight can stimulate anthocyanin production as a protective mechanism in the plant. Anthocyanins react to changes in pH. A slight increase in acidity, whether from environmental factors or the natural aging process, can cause these pigments to shift, revealing a pink hue. The presence of anthocyanins is not harmful; in fact, they are antioxidants and may offer health benefits" Just like potatoes with extra arms, or carrots with extra legs. Let me at 'em. haha 😊
