🌶️ CREAMY POBLANO TUNA PASTA SALAD 🐟🍝 Creamy, high-protein, a little spicy & SO good 🤤 This came together so easily and makes the perfect meal prep! INGREDIENTS • 3 poblano peppers 🌶️ • 1 jalapeño • Greek yogurt • Cottage cheese • Fresh cilantro • 3 cans tuna, drained • Mixed vegetables • Panini noodles • Salt + pepper • Garlic powder • Onion powder HOW TO MAKE IT 1️⃣ Make the sauce: Roast or sauté the poblanos until softened and slightly charred. Remove the stems/seeds, then add to a blender with the jalapeño, Greek yogurt, cottage cheese, cilantro, salt, pepper, garlic powder, onion powder Blend until smooth and creamy. 2️⃣ Cook the pasta: Boil the Panini noodles according to the package directions. 3️⃣ Prep the tuna: Drain 3 cans of tuna and add to a large bowl. Break it apart with a fork. 4️⃣ Add the veggies: Mix in your mixed vegetables. 5️⃣ Add the pasta: Toss the cooled pasta into the bowl with the tuna and vegetables. 6️⃣ Add the sauce: Pour the creamy poblano sauce over everything and mix until well combined and coated. 7️⃣ Taste & adjust: Add more lime, seasoning, cilantro or jalapeño depending on how you like it! 8️⃣ Chill & enjoy: Refrigerate for at least 30 minutes before serving. It gets even better once all the flavors come together!
