Replying to @user793326195054 I get this question a lot! You can bake successfully with starter at almost any stage except right after feeding. Right after a feed it’s too diluted and hasn’t built up enough yeast activity to effectively ferment dough. My only caution with starter that’s been unfed for a long time is it becomes very acidic which can weaken the gluten, making the dough sticky and reducing rise. I recommend using starter at peak because that’s when the yeast is most active, giving you the strongest most predictable rise. A starter that’s simply past peak is still perfectly fine to bake with, it just may ferment a little differently. #creatorsearchinsights #sourdoughstarter #sourdough #sourdoughforbeginners
