Welcome to Episode 4 of All Things Greek!  Today we’re making one of the most famous greek recipes - Roasted Lemon Potatoes.  You’ve probably enjoyed this recipe at your local Greek restaurant but did you know you can prepare these in under 15 minutes at in your own kitchen?  First things first, make sure you get the right potatoes.  This is number 1 place people go wrong when making this recipe.  Be sure to use potatoes like russet, red-skinned potatoes, yukon gold, new potatoes or fingerling potatoes.  My beautiful aunty introduced my mother to the idea of adding mustard to these Roasted Lemon Potatoes a few years ago..  Thea (aunty) Voula, owns an authentic Greek food restaurant in Greece and is truly the best cook (other than Yiayia) on my mother’s side of the family.  So when I say I ran to the kitchen to give these a try, I mean it.  Here’s everything you need to become a Greek recipe expert right out of the comfort of your own home! 7 large russet potatoes or red-skin potato peeled (optional), cut into wedges (or quartered) Juice of 3-4 lemons 5 tbsp olive oil 1/4 cup yellow mustard season to taste - good quality salt is great here 2-3 tbsp. dried oregano 1 tbsp. garlic powder or 4 garlic cloves finely minced or both Preheat oven to 400F. Line a baking sheet with parchment and set it aside.  You can also lightly grease a baking sheet with olive oil or use a non-stick baking dish if you don’t have any parchment.  Both are fine. Into a large mixing bowl add lemon juice, olive oil, mustard and whisk together to combine. Add the potatoes, a few pinches of salt, oregano and garlic and toss together well to coat the potatoes. Note: You could do this, marinate for a few hours then cook. Transfer to a baking sheet. Cook for 55 minutes at 400F.
