The Creamiest Baked Mac and Cheese 🧀 Like cacio e pepe, mac and cheese is one of those dishes that looks simple, but it’s shockingly easy to mess up. And trust me, I’ve done it more times than I can count, so I’m not judging you. I’m just here to save you from making the same mistakes I have. You can follow pretty much any mac and cheese recipe out there (I know it can be stressful choosing one), but there are a few things that matter way more than the recipe itself: 1. Make sure your roux has the right ratios. I use 6 tablespoons of butter and 1/3 cup of flour, slightly less than the classic 1:1 ratio because I live in fear of gritty mac. 2. As for the cheese, I love a mix of medium-sharp cheddar (Tillamook is my go-to), Monterey Jack, smoked gouda, gruyère, and Parmesan. Fontina works, mozzarella works, colby jack works, you really do have options. But if you don’t even know where to start, my combo is a very solid place to begin.
