Prepare the filling. Line a small tray with parchment paper. Divide the Biscoff cookie butter into 10 portions of about 12 g (0.4 oz) each. Place on the tray and freeze for several hours or overnight. 2. Make the dough. Beat the softened butter, brown sugar and granulated sugar until creamy. Add the Biscoff cookie butter and mix until smooth. 3. Add the egg and egg yolk and beat for 2–3 minutes, until well combined and slightly fluffy. 4. In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda and salt. Add to the butter mixture in two additions, mixing on low just until the flour disappears. 5. Fold in the chocolate chips and crushed Biscoff cookies. 6. Divide the dough into 10 portions, about 85–90 g (3–3.2 oz) each. 7. Flatten each piece of dough, place a frozen Biscoff butter portion in the center, then completely seal the dough around it. Roll gently into a ball. 8. Place the stuffed cookies on a parchment-lined baking sheet and freeze overnight. 9. Bake straight from frozen at 350°F (175°C) for about 18 minutes. The edges should be set while the centers remain soft. 10. After baking, place a few pieces of milk chocolate on top of each cookie and gently press them in. 11. Let the cookies cool for 10–15 minutes, then drizzle with melted Biscoff cookie butter and sprinkle with crushed Biscoff cookies.
