My theory is that they don't actually shapeshift using special organs. They are known for having increased psychic abilities being able to manipulate the viewers perception of them. So they just convince ppl underconciously that they r human. If they r somehow distressed their hypnosis ability lowers and the truth is flickering through.

100% I have seen one 4x and he was able to only show his face in super HD and dissapear at will. Very rough skin and amber snake eyes.
