spiderweb cheesecake cookies 🕷️❤️   recipe: black chocolate cookie dough: 1 cup salted butter, browned (226g) 1 cup packed brown sugar (200g) ½ cup granulated sugar (100g) 2 large eggs (100g) 1 tbsp vanilla extract or vanilla paste ¼ cup heavy cream (60g) 2¼ cups all-purpose flour (270g) ¾ cup 100% cocoa powder (60g) 1 tsp baking soda (6g) ½ tsp salt (2g) black gel food coloring, as needed   preheat oven to 350f  brown the butter until deeply golden and fragrant. while the butter is still very warm (almost hot, but not boiling), pour it directly over the brown sugar and granulated sugar. mix until well combined, then let the mixture cool slightly before adding the eggs. add the eggs, vanilla and heavy cream and mix until smooth. add the flour, cocoa powder, baking soda and salt. mix until a soft dough forms. add black gel food coloring after the flour and cocoa have been incorporated, mixing until the dough reaches your desired black color. let the dough rest for 5–10 minutes so the cocoa can absorb some of the excess moisture. the dough will become less sticky and easier to work with as it sits. ( i still used gloves bc it’s messy )  red cheesecake filling: 8 oz cream cheese, softened (226g) 1 cup powdered sugar (120g) 1 tsp vanilla pinch of salt red gel food coloring, as needed mix the softened cream cheese, powdered sugar, vanilla and salt until smooth. add red food coloring until you reach a deep, vibrant red. portion the cheesecake filling into 12 tablespoon-sized portions and place on a lined baking sheet, spread into discs and freeze until firm. assemble: portion the cookie dough into 12 equal portions, using about ⅓ cup of dough per cookie. flatten each portion, place a frozen cheesecake center in the middle, and completely seal the dough around the filling. roll into a smooth ball and place on a lined baking sheet, leaving plenty of space between each cookie. ( they will spread )  bake at 350°F for 15–18 minutes, or until the edges are set and the centers are still soft. let the cookies cool on the baking sheet before decorating. spiderweb decoration: marshmallows melt the marshmallows until soft and stretchy. allow them to cool slightly, then stretch small amounts between your fingers over the cooled cookies to create spiderwebs.
