Pumpkin soup #souprecipe #pumpkinrecipes #FoodTok ingredients: - ~3-5 lbs pumpkin or butternut squash - 4 cups vegetable broth - 1/2 cup coconut cream or heavy cream - 1 onion - 4 cloves garlic - salt, pepper, cayenne - 1 tbsp butter - olive oil Instructions 1) Cut pumpkin in half, remove seeds. Brush olive oil on each side. Roast cut side down at 400F for 30 min 2) Remove pumpkin skin & let cool 3) Heat 2 tbsp olive oil in pot. Add onion & garlic. Cool until onion is translucent 4) Add pumpkin flesh, broth, heavy cream, seasonings. Bring to a boil then simmer for 15 min. Stir in butter 5) Use an immersion blender or stand blender to purée the soup 6) Adjust seasoning if necessary OPTIONAL presentation: To serve in a pumpkin, prior to making the soup. Cut a circle around the stem big enough that you can scoop out the seeds with a spoon. After removing the seeds, drizzle oil inside and roast at 350F for about 30-40 minutes
