Jamie, lemon zest and olive oil can certainly be a good way to enjoy an anchovy🥰. Here, this is how we usually enjoy them: Barcelona → Anchovy + Manzanilla olive + vermouth Valencia → Anchovy + Valencian tomato on bread + vermouth Madrid → Anchovy + potato + draft vermouth Bilbao → Anchovy + piparra + txakoli or vermouth Cantabria → Anchovy + butter on bread + vermouth Every city and every region has its own way of enjoying them. And perhaps that is precisely the richness of Spanish gastronomy
