@thehomesteadingrd: 😬Worried about your produce ripening in time? In zone 4A Minnesota, this is certainly on my mind! An easy hack is to snip off the growing tips of your tomatoes, peppers, squash, and pumpkins about 1 month before your first expected frost 🥶. ✂️This forces the plant to divert its energy into ripening its current fruit, rather than putting out new growth. ✂️This will also help with the overall health of your plant. By now, they may be unruly so by removing some of the excess growth and small fruit, your plant will be more stable (and less chaotic!). ✂️Lastly, thinning out the plant will improve air circulation which will reduce the risk of disease. It will also give more “breathing room” for pollinators to access everything in this final push! *I'm probably a little late in topping since we could freeze in a week or two, but better late than never! Also, even if they're completely green they will ripen on the counter completely fine. It'll take longer sure, but they don't need to "blush" first so if you've reached the end of the season and have to take them off, they will still ripen

tomatoes can ripen in the window or you can just bread the green ones and make fried green tomatoes

I actually trim off all branches with just leaves on them to leave just the fruit. Works really well for me.

we pick all the green tomatoes before the frost and lay them all out on the table in the basement. they ripen over the next 30-60 days and we have fresh tomatoes to the cold season. last year we had about 25 lbs of green tomatoes

As long as one tomato has ripened on the vine, all the rest will eventually ripen as well even if picked when green! Just keep them in a cardboard box in a single layer and they will eventually turn red!

I made some outstanding green tomato salsa. I put them in the Nutri-bullet with everything else, then cooked it on low for a while. Canned it. Yum !
