My Slow-Cooked Ragu Recipe: Ingredients: Olive oil, for frying 2 celery sticks, finely diced 2 carrots, finely diced 1 tsp minced garlic 2 tbsp tomato paste 200g bacon, finely chopped 500g beef mince (I usually use a mix of beef and pork) 1 tsp Vegeta Salt, to taste Black pepper, to taste Paprika, to taste Italian herbs, to taste 700g passata ½ cup red wine 1 cup milk Method: Add a splash of olive oil to your multicooker or bottom of your pan (set it to Sauté). Add the diced celery and carrots and cook for a few minutes until they begin to soften. Add the garlic and tomato paste and continue frying for a couple of minutes. Add the chopped bacon and cook until it has released its fat and softened. You don't want the bacon to brown. Add the mince and sauté for a few minutes, breaking it up as you go. Add the Vegeta, salt, pepper, paprika and Italian herbs, then pour in the passata and stir everything together. Fill the empty passata jar with water, give it a good shake to get all the tomato out, then add that to the pot. Pour in the red wine and milk and give everything a really good stir. Multicooker: Switch from Sauté to Slow Cook, put the lid on and cook on low for 5–6 hours, until rich and beautifully cooked. Stovetop: If you're making it in a pot, reduce the heat to very low, cover and cook for around 4 hours, stirring regularly so it doesn't catch on the bottom. Add a splash of water if needed.
