You will never be forgotten. 🕊️ Nutella Biscoff Cookie Pie 🍪🤎 Ingredients Cookie Dough * 200 g unsalted butter, melted * 160 g brown sugar * 70 g granulated sugar * 1 large egg * 1 egg yolk * 2 tsp vanilla extract * 290 g all-purpose flour * ½ tsp baking soda * ½ tsp baking powder * ½ tsp salt * 130 g semi-sweet or dark chocolate chips Filling * 250–300 g Nutella * 10–12 whole Biscoff cookies Instructions 1. Preheat the oven to 175°C / 350°F and grease a 26 cm (10-inch) round baking pan. 2. Mix the melted butter with the brown sugar and granulated sugar until combined. 3. Add the egg, egg yolk and vanilla extract. Mix until smooth. 4. Add the flour, baking soda, baking powder and salt. Mix just until a cookie dough forms. 5. Fold in the chocolate chips. 6. Press about ⅔ of the cookie dough into the bottom of the pan and slightly up the sides. 7. Spread 250–300 g of Nutella evenly over the cookie dough, leaving about 1–2 cm around the edge. 8. Arrange 10–12 whole Biscoff cookies directly on top of the Nutella. 9. Flatten the remaining cookie dough between two sheets of parchment paper. Carefully place it over the Biscoff cookies and gently seal the edges. 10. Bake for 25–30 minutes, until the edges are golden brown but the center is still soft. 11.
