Bring a pot of water to a boil. Season with salt. Blanch 16 oz. green beans for 4 minutes, then transfer to an ice bath. Then to a dry towel. Boil 6 eggs for 8 minutes. Then boil 16 oz. Small potatoes until tender. Let everything cool and dry.  2. Mix 1/2 cup olive oil, 1/3 cup apple cider vinegar, 2 tbsp dijon, salt, pepper, chopped tarragon, and a pinch of sugar.  3. Sear 1 filet of tuna encrusted with sesame seeds over high heat for 1 minute on each side. Slice.  4. Arrange salad over greens of your choice.
