Welcome Back to Episode 45 of All Things Greek! Today we are making Κοτόπουλο με πατάτες λεμονάτο στο φούρνο - AKA Greek Baked Lemon Chicken and Potatoes.  I feel like I have to add that it is actually being made by a Greek person… Search ‘Greek Chicken and Potatoes’ and thank yourself later. OR click the link in my bio! ALL MY RECIPES ARE ON FOODBYMARIA DOT COM. This recipe is knock-your-socks-off delicious and it’s so easy to make. Just add everything to the casserole dish and let it bake. The aroma that’ll fill your house will make your mouth water. I have so many core, deep, happy memories related to this dish.  Wednesday nights at church with my Greek community.  We didn’t go to church on Sundays because our priest wasn’t from our city so every month we would gather on a random Wednesday night after service (he would travel 3 hours to be with us) and eat a beautiful meal.  Each mother in the Greek community would bring an authentic, comforting dish.  My mom was very busy raising us, driving us from sport to sport and working at our family restaurant - so this was always her go-to!  Don’t confuse the 10 minutes of effort with simplicity or laziness, this dish is truly remarkable.   NOTE: The yellow mustard isn’t something my mother did when we were growing up. It’s completely OPTIONAL!
